Wine Region: Loire-Valley - France

Grape: Sauvignon Blanc

Tasting notes: "An oxidative touch on the nose, then spicy aromas, candied quince, then in the mouth we find a beautiful power with a very saline, almost iodized finish. Utopia is the colour of reggae because during my fermentation, my cellar is spellbound with music and I had to make it understood on the label!" - Jonathan Pabiot

About the winery:
The estate has been created 6th generations ago by Pabiot family. Jonathan Didier took over the domain in 2005. He successfully persuaded his father Didier to convert the family vineyard to organic viticulture. Today the domain is one of the three estates that follow biodynamic and natural practices in the appellation. With genuine respect towards the environment, Jonathan doesn't push the vines to produce massively. This low yield method, combined with biodynamic practises, allow the grapes to give the very best of it selves.
The 19 hectares domain is located in Loges, Pouilly-sur-Loire in France.
The appellation Pouilly-Fume is mainly known for white wines that are floral and fruity. There, the terroir is an association of a semi-continental climate with millions of years old soil. The ground is made up of Kimmeridgian marls, hard limestones and flint giving a mineral, fine and bright aspect to the wine.
