This Chablis has a subtle, lightly toasted nose of citrus and white fruits. The palate is full-bodied, perfectly balanced, and we find a nice fruit and a nice final persistence on citrus notes

THE STORY: After spending all his childhood in a small village in the Chablis region, Courgis, surrounded by a father and a grandfather winegrower, Thomas Pico quickly inherited his passion for the profession. He, therefore, turned to a BTS in viticulture and oenology in Beaune. Returning to the family estate of Bois d'Yver in 2004, he took over 8 hectares which he directly converted to organic farming (ECOCERT) and thus created his own estate, the "Pattes Loup" estate. In 2009, he obtained certification in Organic Agriculture. Today the estate includes 15 hectares of white grapes and Thomas Pico is a rising star in the wine industry.
