Jean-Marc Roulot

You may not be able to find Jean-Marc in his vineyard, nor in his cellar, but also on the screen! Because he is also a professional actor who played in "Rio Sex Comedy", the first movie from director Jonathan Nossiter (aficionados can remember his excellent movie Mondovino) and more recently for the French director Cedric Klapisch in "Ce qui nous lie".

Jean-Marc grew up in an old winemaker family and took over the estate after his father Guy. He is also a "bouilleur", as his father and grandfather before. "Bouilleur" is not exactly a profession but more of a legal status granted by the state that allows people to distil their own spirits.

(RE)DISCOVERY OF THE LIQUOR

Jean-Marc only learnt from his father to distil raspberry and pear into “eau de vie”. Yet 15 years after Guy passed away, Jean-Marc discovered a few apricot liquor bottles. He was very surprised at first since he has never seen his father making any. After tasting, it was as an epiphany. He decided to start the production again, in addition to his wines. It was in 2008.

Jean-Marc receives very ripe apricots from Rhone Valley. After removing the stones, the fruits are infused in neutral spirit. After a few months, the apricot infusion is ready. Then water and sugar are added to give the final apricot liquor. 


Jean-Marc chose a more modern approach by adding less sugar to the liquor. Usually, there is between 200 to 250 g of sugar per litre, whereas Jean-Marc only stops at 170g. The result is a more alcoholic yet dynamic beverage where the fruit shines.
