Domaine Henri Rebourseau encompasses 13.5 hectares of vineyards, spanning the Grand Crus from Gevrey-Chambertin to Vougeot. The winery's vineyards are spread across diverse soil types, encompassing limestone, clay, and gravel. This soil diversity helps to produce wines with complex flavours and aromas.
The domaine embraces traditional methods, cultivating all vineyards through organic farming, and integrating biodynamic practices since 2008. The dedicated team carefully tends to the vineyards, ensuring that each vine expresses the unique character of the soil and climate in its fruit.
Domaine Henri Rebourseau follows a traditional approach to winemaking. The grapes are hand-harvested and sorted before being fermented in small batches. The wines are then aged in oak barrels for a period of 12 to 18 months.
A range of oak barrels, such as new French oak, aged French oak, and American oak, finds utility at the winery. The selection of oak barrels is carefully tailored to suit the specific wine in production.
