Thomas Bouley

From father to son through numerous generations, the Bouley family has cultivated vineyards in Volnay, since 1527, but the Domaine itself was first established in 1919. After being trained in the USA, Oregon and Felton Road in New-Zealand, Thomas, fourth generation, joined his father in the Domain and took the management in 2012, with a main objective in mind, being a part of the greatest Domains in Volnay.
From father to son through numerous generations, the Bouley family has cultivated vineyards in Volnay, since 1527, but the Domaine itself was first established in 1919. After being trained in the USA, Oregon and Felton Road in New-Zealand, Thomas, fourth generation, joined his father in the Domain and took the management in 2012, with a main objective in mind, being a part of the greatest Domains in Volnay.
Today, the estate spans 8.8 hectares in Volnay, Pommard and Beaune, divided into 29 plots. The priority of the domain is to obtain living and balanced soils. 

Thomas farms his vineyards with essentially organic practices, no weed killers or chemical fertilizers is used. The harvest is done manually. The grapes are then sorted in the winery on a vibrating table and mat. After a short and cold maceration, the vinification is done with indigenous yeasts for about 2-3 weeks. The ageing is completed entirely in oak barrels between 15 and 20 months. There is no fining or filtration.
