Located 10 km west of Carcassonne, the farm benefits from a Mediterranean climate and Oceanic influence.
After a night harvest, the grapes are gently pressed without maceration for the Grenache or a short maceration of 4 hours for the Viognier. Fermentation is carried out in temperature-controlled stainless steel tanks at 15°C. Aging on lees for 6 months precedes bottling carried out at the Château with a light filtration. Very few sulfites are used.
